Kiflings!

So like I said on my last blog I will making Christmas cookies for the next few blogs. So this week I made Kiflings which are the perfect cookies to have with a glass of milk! I hope you enjoy.

What you will need:
1 cup of sugar
1 lb of butter
1 cup of ground nuts (almonds or walnuts) 
6 cups of flour
1 teaspoon of vanilla

             First cram the the butter at room temperature with the sugar. Then knead flour into the the sugar and butter mixture until it is light and fluffy. The dough will be more flaky than doughy. Now add nuts and vanilla and stir with you hands. Now roll into separate balls. Roll out the the balls individually and pat it down flat. Use the edge of a cup to cut crescent shaped cookies.Now you will want to place them on a cookie sheet and cook for eleven minutes at 375 degrees. Take the Kiflings out of the oven when golden brown. When they have cool for a few minutes (make sure they are still warm), roll them in powdered sugar! I hope you liked this one... if you have any question don't be afraid to make a comment! Magic Cookie Bars!

             So because it is almost Christmas and it is December, even though it doesn't feel like it, especially in Colorado. I have decided to put some of my favorite cookie recipes for Christmas cookies for the next few weeks. So this week I decided to make Magic Cookie Bars.
What you will need:
11/2 cup Corn Flakes
3 tbs. Sugar
1 stick of Butter (melted)
1 cup coarsely chopped Nuts
1 cup Chocolate Chips
1/13 cup of Flaked Coconut
1 can of Condensed Milk

           To make a crust combine crushed corn flakes, butter, and sugar. Still until all the ingredients are thoroughly mixed. 

             In a 13x9x2 pan press the mixture evenly and firmly in the bottom of the pan. I recommend using the back of a spoon.

Sprinkle the nuts evenly over the crust.             

 Sprinkle chocolate chips evenly over the crust and nuts.

 Now sprinkle the coconut over the chips, nuts, and crust.

       Evenly spread the condensed milk over the coconut. You will want to drizzle it over slowly with a spoon.


Bake in the oven at 350 degrees for 25 minutes or until lightly browned over the edges. These are truly scrumptious and very yummy so please try them. I hope you enjoy! Bon'Appetit!

Shrimp Scampi with Artichoke Hearts!

So this week I have decided to make pasta again, because I feel like I haven't made pasta in a while. So this pasta is a yummy shrimp scampi with a little spice. I hope you enjoy.

What you will need:
2 tablespoons olive oil
5-8 tablespoons of butter
3 clovers of garlic, minced
1/3 cup dry white wine
3/4 teaspoon salt
1/8 teaspoon red pepper flakes or more if you like it spicy
cracked black pepper to taste
2 pounds large shrimp, peeled
1 cup marinated artichoke hearts, drained
1/2 cup of freshly chopped basil
1 pound of linguine of angel hair pasta
 1/2 cup grated Parmesan cheese
while you are making the scampi cook the noodles in a separate pan

In a skillet over medium high heat, add the oil and melt butter. 

 Add in minced garlic and cook until fragrant, about one minute.

 Reduce to medium low and add in wine.

Add salt, red pepper flakes, and black pepper, bring to a simmer and let cook in half.

 Drain and chop artichokes and peel shrimp.

 Add in the shrimp and artichokes, stirring occasionally until the shrimp is pink and hot.

 Add basil and Parmesan cheese cook for about one minute.
