Pumpkin Brownies!

              So since the past week has been really busy for me with Thanksgiving and everything I have decided to just write down the recipe of pumpkin brownies without including pictures. Simply because that just takes too long. So there are two parts of this recipe the brownie itself and then the frosting, I hope you enjoy.

What you will need for brownies:
1 cup melted butter
4 eggs
2 cup sugar
1 cup pumpkin
1 1/2 cup flour
1 1/2 teaspoon pumpkin pie spice
1/4 teaspoon cinnamon
1 teaspoon vanilla

To start things off you will want to beat eggs well: then beat in sugar, add butter, pumpkin, and vanilla and beat well. Add in flour and beat well, now add your spices. Spread evenly in a 9 x 13 inch pan. Bake at 350 degrees for 25-35 minutes. Let cool and frost. While the brownies are cooking I recommend making the frosting.

What you will need for the frosting: 
6 oz. softened cream cheese
1/2 cup softened butter
2 teaspoon vanilla
11/2-2 cup powdered sugar

Homemade Meatballs!


               So this week I decided to make some yummy homemade meatballs, I hope you enjoy.

What you will need:
Bread crumbs
1/3 cup milk
1 pound ground beef
1 Tablespoon onion
1 Tablespoon parsley
1 egg 
1 Tablespoon Romano cheese
1 clove garlic
Salt and pepper to taste

Start with one pound of ground beef in a large bowl.

 Pour in one third cup of milk. Stir.

 Add Garlic and Onions. Stir.

 Add in Parsley. Stir.

 Add in eggs and stir well.

  Pour in vegetable oil and stir well.

 Pour in a cup at a time of bread crumbs and 3 tablespoons of cheese, along with salt and pepper, until the meat is at a preferable texture.

 Ball the meat and place on a cookie sheet. Bake at 350 degrees for 35 minutes.

         Add to marinara sauce and spaghetti. I hope you enjoy! Bon'Appetit!

Italian Salad!

      Ok, so normally I would show pictures of the steps I take when I make stuff but today since I am making a salad I thought it would just be easier to give you all the information instead of adding pictures. Normally I would make something a little more complicated, but I know its hard to find a really yummy salad so that is why I am giving you this! I hope you enjoy! By the way this is for the salad and the dressing.

What you will need:

FOR SALAD:
Romaine lettuce, bite sized
Ice burg lettuce, bite sized
1 small red onion peeled and thinly sliced (optional)
4 ounces of blue cheese crumbled (if you're not a fan of blue cheese like me, just use feta cheese)
Corn Oil, for frying
4 ounces of thinly sliced Prosciutto cut into about two inch squares (you may also use bacon)

FOR DRESSING:
1 Tablespoon of Dijon mustard

2 teaspoons of granulated sugar 
3/4 cup water
2 Tablespoons of fresh minced garlic
1/3 cup of red wine vinegar
1 Tablespoon salt
2 cups Vegetable oil
Black pepper to taste
1 pinch of dried oregano

DIRECTIONS:
            1. In a large skillet, heat 1/2 of your corn oil. Cook Prosciutto until it turns dark brown and curls at the ends. Drain on a paper towel and crumble in to small bits. Set aside. (If you are using bacon you DON'T need the corn oil.)
            2. Place your lettuce, onion, cheese and prosciutto in a large bowl; toss it up real nice.
            3. For dressing, in a medium bowl, combine mustard, sugar, water, garlic, vinegar, and salt.  Whisk together until combined. Now whisk in your oil slowly in a stream formation. Add pepper and oregano, whisk to combine.
            4. Plate your salad and drizzle a little bit of dressing over it because you don't want too much...

This recipe makes a lot of salad so I would wrap the salad in a paper towel and then put it in a bowl with a lid. Put your dressing in a separate bowl in the refrigerator. Now you have a yummy salad whenever you want it! Bon'Appetit!

Zucchini Bread!!!


               Hey there everybody... OK so this weekend it was freezing in Colorado so cold weather for me equals baking... Common sense. So I thought I would make some delightful Zucchini bread... Yummy. I hope you enjoy!

What you need:

2 cups of granulated sugar
3 eggs
1 tablespoon of vanilla
1 cup of vegetable oil
2 cups of grated zucchini
3/4 cup of chopped walnuts (optional)
1 teaspoon of salt
1 teaspoon of baking soda
1/4 teaspoon of baking powder
1 teaspoon of allspice
1 teaspoon of cloves
1 teaspoon of cinnamon
3 cups of flour

              First, start with with pouring your sugar into a large bowl... If this is too complicated you really should find another hobby... Hehe


                  Now, crack three eggs into your sugar and beat them together until they are smooth and well blended.


                   Add your yummy vanilla extract and your oil to the mixture... Blend really well! 

               Now add in your salt, baking soda and baking powder... Don't forget this step... If you do your bread will be a failure...

                 Add the allspice, cloves, and cinnamon into your lovely mixture... I love the smell of all of these spices... Yummy

               Pour the flour into the mixture.. NOT all at once... That will turn  into a huge mess... Pour in about half a cup every time!

           Add your shredded zucchini and stir... Or blend on a very low speed... Now if your batter is a little thick for any reason add a little bit more oil... Just like a tablespoon or so... You don't want it like cookie dough, but you don't want it to be like water.

               Stir in your nuts...

                Now prepare three medium bread pans and flour them...If you don't know how to flour pans.. It is OK . What you do is you spread about a tablespoon or less of butter in your pans making sure you cover your sides and bottom very well... Now sprinkle about a tablespoon of flour on the bottom of the pan and hit it around so the flour hits all the buttered parts... If you are confused...  I am sure there are videos on YouTube. 
                 Pour mixture into the pans about 2/3 full. Bake at 325 degrees for about 45 minutes, then check with a toothpick. If it comes out clean, take the bread out of the oven and let cool.
                  Then slice up your masterpiece and eat it however way you like it! I hope you enjoy! Bon'Appetit!
